Buffalo Baked Boneless Chicken Thighs

Ingredients

The chicken

  • 1.5 lbs boneless skinless chicken thighs

The buffalo sauce

  • ¼ cup melted butter
  • ½ cup buffalo sauce
  • ½ tablespoon honey
  • ½ teaspoon salt
  • ½ teaspoon pepper

For serving

  • to taste ranch or blue cheese

Instructions

  1. Place chicken thighs in a Ziploc bag or bowl.
  2. Melt butter in a saucepan over medium/low heat, then remove from heat.
  3. Whisk in buffalo sauce until combined.
  4. Add honey and whisk until dissolved, then add salt and pepper.
  5. Pour half of the buffalo sauce over the chicken and coat well.
  6. Marinate in the refrigerator for at least 2 hours, up to 6 hours.
  7. Preheat oven to 425ºF and line a baking sheet with parchment paper.
  8. Bake chicken thighs for 10 minutes.
  9. Brush with remaining buffalo sauce and bake for another 10 minutes.
  10. Broil for 1-2 minutes until caramelized.
  11. Ensure internal temperature reaches 165ºF, then let rest for 10 minutes.
  12. Serve with ranch or blue cheese and your favorite sides.
