Ingredients

The chicken

  • 2.5 lbs bone in skin on chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper

The buffalo sauce

  • ¼ cup hot sauce
  • 1 tbsp ghee
  • 1 tbsp nutritional yeast
  • 1 tsp lemon juice
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder

Instructions

  1. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. Season the chicken thighs lightly with salt and pepper on both sides.
  3. Bake the chicken in the oven for 35-40 minutes until cooked through.
  4. While the chicken cooks, mix all buffalo sauce ingredients in a bowl.
  5. Once the chicken reaches an internal temperature of 165°F, brush the buffalo sauce on both sides.
  6. Serve immediately.
