Ingredients

The crust

  • ½ cup shelled pistachios
  • ½ cup Panko breadcrumbs
  • ¼ teaspoon ground black pepper
  • ½ teaspoon coarse salt

The fish

  • 1 pound fresh cod, cut into 4 filets

The binding mixture

  • 2 large eggs
  • 2 teaspoons Dijon mustard

Optional garnish

  • to taste lemon wedges

Instructions

  1. Preheat the oven to 400 degrees and prepare a baking sheet with a wire rack and cooking spray.
  2. In a food processor, combine pistachios, Panko breadcrumbs, ¼ teaspoon salt, and a pinch of black pepper and pulse until large crumbs form.
  3. Transfer the crumb mixture to a shallow bowl and set aside.
  4. In another shallow bowl, whisk together the eggs and Dijon mustard.
  5. Season the cod filets with the remaining salt and pepper.
  6. Dip each filet into the egg mixture, then coat generously with the pistachio mixture.
  7. Place the coated filets on the baking sheet, spray lightly with cooking spray, and bake for 10-12 minutes until flaky.
