Pistachio-Crusted Cod

The fish

Instructions
- Preheat the oven to 400 degrees and prepare a baking sheet with a wire rack and cooking spray.
- In a food processor, combine pistachios, Panko breadcrumbs, ¼ teaspoon salt, and a pinch of black pepper and pulse until large crumbs form.
- Transfer the crumb mixture to a shallow bowl and set aside.
- In another shallow bowl, whisk together the eggs and Dijon mustard.
- Season the cod filets with the remaining salt and pepper.
- Dip each filet into the egg mixture, then coat generously with the pistachio mixture.
- Place the coated filets on the baking sheet, spray lightly with cooking spray, and bake for 10-12 minutes until flaky.
