Baked Breaded Cod with Dijon

Ingredients

The fish

  • 1 ½-2 lbs cod, patted dry

The coating

  • 2 tbsp butter, melted
  • 2 tbsp Dijon mustard
  • 1 cup Panko breadcrumbs
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp fine sea salt
  • ¼ tsp black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with foil or cooking spray.
  2. Melt the butter and set aside.
  3. Ensure the cod is dry and place it on the baking sheet, brushing it with Dijon mustard.
  4. In a bowl, combine breadcrumbs, melted butter, Italian seasoning, garlic powder, salt, and pepper, then press the mixture onto the fish.
  5. Spray the top of the fish with cooking spray and bake for about 15 minutes until it flakes easily with a fork.
