Chopped Brussels Sprout Salad with Chicken and Walnuts

Ingredients

The salad

  • 1 cup cooked chicken, cubed or shredded
  • 4 cups sliced Brussels sprouts
  • ½ cup walnuts
  • ¼ cup Parmesan cheese
  • ½ cup chopped onion

The dressing

  • 1 tablespoon butter
  • juice of 1 orange orange
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • to taste salt and pepper

Instructions

  1. Prepare the chicken and slice the Brussels sprouts thinly using a mandoline.
  2. Pulse the walnuts in a food processor until chopped, then toast them in a skillet over medium-high heat until golden.
  3. In the same skillet, sauté the butter and onion until golden, then transfer to a food processor.
  4. Add orange juice, honey, and olive oil to the food processor and blend until smooth. Season with salt and pepper.
  5. Sauté the Brussels sprouts in the onion skillet over high heat for 1-2 minutes until bright green.
  6. In a large bowl, combine the Brussels sprouts, walnuts, chicken, and Parmesan.
  7. Toss the salad with the dressing and serve warm or cold, keeping dressing separate for leftovers.
