Chopped Brussels Sprout Salad with Chicken and Walnuts

The dressing

Instructions
- Prepare the chicken and slice the Brussels sprouts thinly using a mandoline.
- Pulse the walnuts in a food processor until chopped, then toast them in a skillet over medium-high heat until golden.
- In the same skillet, sauté the butter and onion until golden, then transfer to a food processor.
- Add orange juice, honey, and olive oil to the food processor and blend until smooth. Season with salt and pepper.
- Sauté the Brussels sprouts in the onion skillet over high heat for 1-2 minutes until bright green.
- In a large bowl, combine the Brussels sprouts, walnuts, chicken, and Parmesan.
- Toss the salad with the dressing and serve warm or cold, keeping dressing separate for leftovers.
