Instant Pot BBQ Pulled Chicken with Simple Slaw

sweet potatoes, baked

Additional BBQ sauce and dressing

Fresh parsley or cilantro, chopped
Instructions
- Preheat the oven and prepare sweet potatoes if serving.
- Place chicken, onion, broth, and half of the BBQ sauce in the Instant Pot.
- Seal the Instant Pot and set it to the poultry setting for 13 minutes.
- While the chicken is cooking, mix all slaw ingredients in a bowl and refrigerate.
- Once cooking time is up, allow pressure to release naturally for 5-10 minutes, then vent to release remaining pressure.
- Remove chicken, shred it, and return it to the pot with the remaining BBQ sauce.
- To serve, slice baked sweet potatoes, stuff with chicken, and top with slaw. Drizzle with additional BBQ sauce or dressing.
