Instant Pot BBQ Pulled Chicken with Simple Slaw

Ingredients

The Chicken

  • 2 lbs boneless, skinless chicken breast and/or thighs
  • 1 small yellow onion, sliced
  • cup broth or water
  • 1 cup Tessemae’s BBQ sauce, divided

The Slaw

  • 1 bag broccoli slaw
  • ½ cup toasted seeds (sunflower or pumpkin seeds)
  • ½ cup Tessemae’s Ranch or Caesar Dressing
  • 4 green onions, sliced
  • ¼ cup dried cranberries or raisins (optional)

For Serving (optional)

  • 4–8 small to medium sweet potatoes, baked
  • Additional BBQ sauce and dressing
  • Fresh parsley or cilantro, chopped

Instructions

  1. Preheat the oven and prepare sweet potatoes if serving.
  2. Place chicken, onion, broth, and half of the BBQ sauce in the Instant Pot.
  3. Seal the Instant Pot and set it to the poultry setting for 13 minutes.
  4. While the chicken is cooking, mix all slaw ingredients in a bowl and refrigerate.
  5. Once cooking time is up, allow pressure to release naturally for 5-10 minutes, then vent to release remaining pressure.
  6. Remove chicken, shred it, and return it to the pot with the remaining BBQ sauce.
  7. To serve, slice baked sweet potatoes, stuff with chicken, and top with slaw. Drizzle with additional BBQ sauce or dressing.
