Ingredients

The cake

  • 3 cups gluten-free flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp salt
  • 4 pcs eggs
  • cups pure maple syrup
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 cups chopped apples, peeled and cored

The glaze

  • ¼ cup coconut milk
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 tsp arrowroot powder

Instructions

  1. 1. Preheat the oven to 350°F and grease a 12-cup bundt pan.
  2. 2. In a small bowl, mix the flour, baking powder, cinnamon, baking soda, and salt.
  3. 3. In a large bowl, beat the eggs, then add the maple syrup, coconut oil, and vanilla extract. Stir together.
  4. 4. Add the dry ingredients to the large bowl and stir in the chopped apples.
  5. 5. Transfer the batter to the bundt pan and bake for 50 to 55 minutes, or until a toothpick comes out clean.
