Instructions
- 1. Preheat the oven to 350°F and grease a 12-cup bundt pan.
- 2. In a small bowl, mix the flour, baking powder, cinnamon, baking soda, and salt.
- 3. In a large bowl, beat the eggs, then add the maple syrup, coconut oil, and vanilla extract. Stir together.
- 4. Add the dry ingredients to the large bowl and stir in the chopped apples.
- 5. Transfer the batter to the bundt pan and bake for 50 to 55 minutes, or until a toothpick comes out clean.
- 6. Cool the cake in the pan for 10 minutes, then remove it and cool completely on a wire rack.
- 7. To make the glaze, stir together the coconut milk and maple syrup in a small pot and bring to a gentle simmer.
- 8. In a small bowl, mix the arrowroot powder and vanilla extract, then add it to the pot and whisk until thickened.
- 9. Drizzle the glaze over the cooled cake.
