Ingredients

The cake

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • cups vegetable oil
  • ½ cup plain yogurt or sour cream
  • cups packed light or dark brown sugar
  • ½ cup granulated sugar
  • 3 large eggs
  • 1 Tablespoon pure vanilla extract
  • 3 cups peeled and chopped apples

The glaze

  • 1 cup packed light or dark brown sugar
  • ¼ cup unsalted butter
  • ½ cup heavy cream
  • ½ cup confectioners’ sugar

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a Bundt pan with nonstick spray.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the oil, yogurt, brown sugar, granulated sugar, eggs, and vanilla until creamy.
  4. Combine the wet and dry ingredients, mixing until just combined, then fold in the apple chunks.
  5. Pour the batter into the prepared Bundt pan and bake for 55–75 minutes, checking for doneness with a toothpick.
  6. Allow the cake to cool in the pan before inverting it onto a serving plate.
  7. For the glaze, combine butter, brown sugar, and heavy cream in a saucepan, bring to a boil, then simmer and stir in confectioners' sugar.
  8. Let the glaze cool slightly before spooning it over the cake just before serving.
