Ingredients

The cake

  • ¾ cup white sugar
  • ½ cup oil (olive oil recommended)
  • 2 units eggs
  • ½ cup honey
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 4 units minced apples (about 2–3 cups)

The glaze

  • 2 tablespoons butter
  • cups powdered sugar
  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup
  • 1–2 tablespoons water

Instructions

  1. Preheat the oven to 325°F and grease a bundt pan.
  2. Whisk together the sugar and oil until smooth, then add eggs, honey, and vanilla.
  3. In another bowl, mix the flours, baking powder, baking soda, salt, and cinnamon.
  4. Combine the dry ingredients with the wet ingredients until just mixed.
  5. Core and mince the apples, then fold them into the batter.
  6. Pour the batter into the bundt pan, filling it ¾ full.
  7. Bake for 50 minutes, let it stand for 10 minutes, then invert onto a plate.
  8. For the glaze, melt butter and mix with powdered sugar, vanilla, and maple syrup, adding water to reach desired consistency.
