Ingredients

  • 2 cups cashew butter
  • ½ cup maple syrup
  • 1-2 tablespoons rainbow sprinkles

Instructions

  1. Line a baking tray or large plate with parchment paper.
  2. In a large mixing bowl, combine the coconut flour, cashew butter, and maple syrup, then fold in the sprinkles.
  3. Adjust the consistency by adding more coconut flour if too thin or milk/water if too thick.
  4. Using your hands, form small balls and place them on the parchment paper, pressing each ball into a cookie shape.
  5. Refrigerate for at least 30 minutes to firm up.
