Ingredients

The meatballs

  • 1 pound lean ground beef
  • 1 pound lean ground pork
  • 2 large eggs
  • cup panko breadcrumbs
  • 2 tablespoons grated Parmesan
  • 1 ½ tablespoons Italian seasoning
  • 1 tablespoon Dijon mustard
  • ½ tablespoon dried oregano leaves
  • ¾ teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • a pinch crushed red pepper flakes

The skillet

  • ½ tablespoon olive oil
  • 2 cups chopped baby spinach
  • 3-4 cloves garlic, peeled and minced
  • a pinch coarse salt
  • a pinch ground black pepper
  • 3 cups marinara
  • 4 ounces fresh mozzarella, sliced
  • fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with a wire rack and cooking spray.
  2. In a large bowl, combine the beef, pork, eggs, breadcrumbs, Parmesan, Italian seasoning, mustard, and spices until mixed well.
  3. Form meatballs about 2 inches in diameter and place them on the wire rack. Bake for 10-12 minutes until browned.
  4. In a skillet, heat olive oil over medium-high heat and add spinach, cooking until wilted.
  5. Stir in garlic and season with salt and pepper. Add the cooked meatballs to the skillet and cover with marinara, topping with mozzarella slices.
  6. Transfer the skillet to the oven and cook for 6-8 minutes until the marinara is hot and the cheese melts.
  7. Switch the oven to low broil for 2-3 minutes until the cheese is bubbly and browned.
  8. Serve garnished with fresh basil.
