Instructions
- Preheat the oven to 375°F and prepare a baking sheet with a wire rack and cooking spray.
- In a large bowl, combine the beef, pork, eggs, breadcrumbs, Parmesan, Italian seasoning, mustard, and spices until mixed well.
- Form meatballs about 2 inches in diameter and place them on the wire rack. Bake for 10-12 minutes until browned.
- In a skillet, heat olive oil over medium-high heat and add spinach, cooking until wilted.
- Stir in garlic and season with salt and pepper. Add the cooked meatballs to the skillet and cover with marinara, topping with mozzarella slices.
- Transfer the skillet to the oven and cook for 6-8 minutes until the marinara is hot and the cheese melts.
- Switch the oven to low broil for 2-3 minutes until the cheese is bubbly and browned.
- Serve garnished with fresh basil.
