Ingredients

The meat mixture

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 large eggs

The binders and flavorings

  • ½ cup plain bread crumbs
  • ½ cup milk
  • 2 tablespoon olive oil
  • 1 cup onion, fine diced
  • 3 cloves garlic, finely minced
  • 2 tablespoon Romano cheese or parmesan cheese
  • 1 tablespoon Italian parsley, finely chopped
  • 1 tablespoon basil, fresh, finely chopped
  • 1 teaspoon oregano, dried
  • 1 ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. In a small bowl, combine the bread crumbs and milk, and let them soak for 20 minutes.
  4. Heat olive oil in a skillet over medium heat, add the chopped onion, and cook until softened.
  5. Add chopped garlic to the skillet and cook for an additional 1-2 minutes.
  6. In a large bowl, combine the ground beef and pork, mixing until blended.
  7. Add the cooked onion and garlic, soaked bread crumb mixture, cheese, parsley, salt, and pepper to the meat mixture.
  8. Pour the beaten eggs over the mixture and fold the ingredients together carefully to avoid over-mixing.
  9. Form the mixture into balls about 1 ½ inches in diameter and place them on the prepared baking sheet.
  10. Bake in the preheated oven for 15-20 minutes until the internal temperature reaches 165°F.
