Ingredients

The meatball mixture

  • 1 lb lean ground beef
  • 1 large egg
  • ½ cup milk
  • ½ cup crushed crackers or breadcrumbs
  • cup freshly grated Parmesan cheese
  • ¼ cup finely minced yellow onion
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

Optional garnishes and serving

  • to taste fresh parsley
  • to taste additional Parmesan cheese
  • as needed pasta sauce
  • as needed cooked pasta or zucchini noodles

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the ground beef, egg, milk, crushed crackers, Parmesan cheese, onion, Italian seasoning, garlic powder, salt, and pepper until well combined.
  3. Form the mixture into 12 golf-ball-sized meatballs.
  4. Place the meatballs on the prepared baking sheet.
  5. Bake for 16-20 minutes until the internal temperature reaches 165°F.
  6. Optionally, heat pasta sauce in a skillet, then add the cooked meatballs and toss gently to coat.
  7. Garnish with parsley and Parmesan cheese before serving over noodles or zucchini noodles.
