Ingredients

The cashews

  • 2 cups Raw Cashews

The seasoning

  • 1 Tablespoon peanut oil
  • 2 Tablespoons finely minced ginger
  • 2 Tablespoons minced garlic
  • 8 pieces dry red Thai chilies
  • 1 tsp soy sauce
  • ½ tsp salt
  • ½ tsp sugar
  • 1-2 pieces scallions
  • 1 Tablespoon toasted sesame seeds

Instructions

  1. Heat a wok over medium heat and toast the cashews for about 5 minutes, stirring constantly.
  2. If necessary, lower the heat to prevent burning.
  3. Once the cashews are toasted, add the peanut oil and increase the heat slightly.
  4. Add the minced ginger and garlic, sautéing for 1-2 minutes until fragrant.
  5. Stir in the chilies, soy sauce, salt, and sugar, and mix until dissolved.
  6. Remove from heat and toss with scallions and sesame seeds.
  7. Serve warm.
