Steak & Mango Stir-Fry

Ingredients

The sauce

  • 3 tablespoons water
  • 2 tablespoons fresh lime juice
  • 1 tablespoon brown sugar
  • 2 teaspoons soy sauce
  • ½ teaspoon cornstarch

The stir-fry

  • 12 ounces flank steak, thinly sliced
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon cooking oil
  • 1 small red onion, sliced
  • 1 medium red bell pepper, sliced
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon minced fresh garlic
  • 1 cup cubed ripe mango
  • ¼ cup fresh basil, roughly chopped or torn
  • 2 tablespoons chopped cilantro
  • 2 tablespoons chopped fresh mint

Instructions

  1. Whisk together the water, lime juice, brown sugar, soy sauce, and cornstarch to make the sauce and set aside.
  2. Toss together the basil, cilantro, and mint and set aside.
  3. Sprinkle the flank steak with crushed red pepper and black pepper, then toss to combine.
  4. Heat half of the oil in a large skillet or wok over high heat, then add the steak and cook for 3-4 minutes until almost cooked through. Remove from the pan and set aside.
  5. In the same skillet, heat the remaining oil and add the sliced onion, red bell pepper, and ginger. Cook for 1-2 minutes until tender-crisp.
  6. Add the minced garlic, cooked steak, and cubed mango, then stir-fry until the steak is fully cooked.
  7. Add the sauce to the pan and cook until it thickens slightly.
  8. Serve immediately over rice and sprinkle with the herb mixture.
