Pepper Steak Stir Fry

The stir fry

red bell pepper
cored, seeded and cut into strips

green bell pepper
cored, seeded and cut into strips

flank steak, thinly sliced

minced garlic

The sauce

cup
soy sauce

sugar

cornstarch
Instructions
- Heat 1 teaspoon of vegetable oil in a large pan over medium-high heat.
- Add the sliced bell peppers and cook until just tender, then remove from the pan.
- Add the remaining oil to the pan and season the flank steak with salt and pepper.
- Increase heat to high and cook the steak until lightly browned.
- Add minced garlic and ginger to the pan and cook briefly.
- Return the cooked peppers to the pan with the steak.
- In a small bowl, whisk together soy sauce, sugar, water, and cornstarch.
- Pour the sauce over the steak mixture and bring to a simmer, cooking until thickened.
