Ingredients

The meat and vegetables

  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 7 pieces green onions, sliced into 2-3 inch pieces
  • 1 large green pepper, sliced into strips
  • 1 large red pepper, sliced into strips
  • 2 teaspoons white sesame seeds

The dry rub

  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 1 teaspoon garlic powder
  • ½ tablespoon brown sugar
  • ½ teaspoon red pepper flakes

The sauce

  • cup soy sauce
  • 2 tablespoons maple syrup
  • ¼ cup rice vinegar
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon cornstarch

Instructions

  1. Tenderize the flank steak and pound it to a 1-inch thickness.
  2. Mix kosher salt, ground pepper, garlic powder, brown sugar, and red pepper flakes in a bowl.
  3. Massage the spice mix into the flank steak and let it rest for 20-30 minutes.
  4. Prepare the pepper steak sauce by shaking soy sauce, maple syrup, rice vinegar, ginger, and cornstarch in a jar until dissolved.
  5. Slice the flank steak into thin strips against the grain.
  6. Heat olive oil in a skillet over medium/high heat and cook the steak for 1-2 minutes on each side, leaving some pink.
  7. Remove the steak and sauté the red and green peppers in the same pan for 4-5 minutes.
  8. Add green onions to the peppers and sauté for an additional 2 minutes.
  9. Return the steak and add the pepper steak sauce to the pan, stirring until everything is coated and the sauce thickens.
  10. Serve the pepper steak over rice and sprinkle with sesame seeds.
