Ingredients

The main ingredients

  • 2 Tablespoons Vegetable Oil
  • 2 lg Bell Peppers (1 red, 1 green), seeded and sliced
  • lbs Flank Steak, sliced thin, against the grain
  • ½ Teaspoon Salt
  • ½ Teaspoon Black Pepper

The Sauce

  • 3 lg cloves Garlic, pressed or grated
  • Tablespoons Grated Ginger
  • ¼ cup Low Sodium Soy Sauce
  • Tablespoons Granulated Sugar (or to taste)
  • ¾ cup Chicken Broth or Water

To Thicken

  • Tablespoons Cornstarch
  • 2 Tablespoons Cold Water

Instructions

  1. 1. Sauté the bell peppers in vegetable oil until soft but still crisp, then set aside.
  2. 2. Brown the flank steak with salt and pepper in the pot.
  3. 3. Mix the sauce ingredients in a bowl and pour over the steak, then cancel the sauté setting.
  4. 4. Add broth or water, seal the pot, and pressure cook on high for 10 minutes.
  5. 5. Let the pressure release for 3 minutes, then release remaining pressure.
  6. 6. Whisk cornstarch and cold water together, then add to the pot to thicken the sauce.
  7. 7. Stir in the bell peppers and serve over rice.
