Pepper Steak

Ingredients

Marinade and Sauce

  • ¼ cup honey
  • 2 tablespoons brown sugar
  • ½ cup red wine vinegar
  • ½ cup soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons freshly ground black pepper

Steak and Serving Ingredients

  • pounds flank steak
  • to taste salt
  • 3 tablespoons vegetable oil
  • 2 bell peppers any color, stemmed, seeded, and thinly sliced
  • 1 onion halved and thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons cornstarch
  • hot mashed potatoes, for serving

Instructions

  1. Whisk together honey, brown sugar, red wine vinegar, soy sauce, sesame oil, and black pepper to make the sauce.
  2. Reserve ¼ cup of the sauce for marinating the meat and set the rest aside.
  3. Freeze the flank steak for 15 to 20 minutes to make slicing easier.
  4. Slice the steak thinly against the grain and marinate in the reserved sauce for at least 10 minutes.
  5. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
  6. Cook half the steak for 1 minute without stirring, then stir and cook for another minute until browned.
  7. Remove the steak and repeat with the remaining steak.
  8. Wipe out the skillet and add another tablespoon of oil, then stir-fry the bell peppers and onions until tender-crisp.
  9. Stir cornstarch into the reserved sauce and add garlic and ginger to the skillet.
  10. Return the steak to the skillet, pour in the sauce, and cook until the sauce thickens slightly.
  11. Serve the pepper steak over mashed potatoes.
