Steak and Serving Ingredients

any color, stemmed, seeded, and thinly sliced

garlic, minced

fresh ginger, minced

Instructions
- Whisk together honey, brown sugar, red wine vinegar, soy sauce, sesame oil, and black pepper to make the sauce.
- Reserve ¼ cup of the sauce for marinating the meat and set the rest aside.
- Freeze the flank steak for 15 to 20 minutes to make slicing easier.
- Slice the steak thinly against the grain and marinate in the reserved sauce for at least 10 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
- Cook half the steak for 1 minute without stirring, then stir and cook for another minute until browned.
- Remove the steak and repeat with the remaining steak.
- Wipe out the skillet and add another tablespoon of oil, then stir-fry the bell peppers and onions until tender-crisp.
- Stir cornstarch into the reserved sauce and add garlic and ginger to the skillet.
- Return the steak to the skillet, pour in the sauce, and cook until the sauce thickens slightly.
- Serve the pepper steak over mashed potatoes.
