Ingredients

The batter

  • 4 tablespoons butter
  • ½ cup whole or 2% milk
  • ½ cup all-purpose flour
  • 4 large eggs
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 1 zest lemon

The toppings

  • 1 cup blueberries
  • to taste confectioners sugar
  • to taste maple syrup

Instructions

  1. Preheat the oven to 450°F and place a cast iron skillet over low heat.
  2. Melt 2 tablespoons of butter and transfer it to a blender.
  3. Add the milk, flour, eggs, sugar, vanilla, salt, and lemon zest to the blender and blend until smooth.
  4. Melt the remaining 2 tablespoons of butter in the skillet, then add the blueberries and shake the skillet.
  5. Pour the batter over the blueberries and transfer the skillet to the oven.
  6. Bake for about 15 minutes until puffed and golden.
  7. Remove from the oven, dust with confectioners sugar, and serve with maple syrup if desired.
