Ingredients

The batter

  • 4 units Eggs
  • 3 tablespoons Cane Sugar
  • 1 teaspoon Vanilla Extract
  • ½ cup All-Purpose Flour
  • 2 tablespoons Unsalted Butter (melted)
  • 1 pinch Sea Salt
  • 1 unit Lemon (zested)
  • ½ cup Milk of Choice

The topping

  • 1 cup Strawberries (chopped)
  • 2 tablespoons Unsalted Butter

Instructions

  1. Add all batter ingredients to a blender and blend on low for about 20 seconds until just combined.
  2. Let the batter rest in the blender for about 10 minutes.
  3. Preheat the oven to 450°F and grease a 10-inch cast iron skillet with melted butter.
  4. Wash and chop the strawberries, then add them to the skillet and toss to coat with butter.
  5. Pour the batter over the strawberries, ensuring it is evenly distributed.
  6. Bake in the oven for 17-18 minutes until fluffy and lightly browned.
  7. Remove from the oven, dust with powdered sugar and maple syrup if desired, serve, and enjoy.
