Jalapeño Popper Dip

Ingredients

The dip

  • 3 pieces jalapeño peppers
  • 1 clove garlic
  • cups thick whole milk Greek yogurt
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • ¼ teaspoon smoked paprika
  • ½ cup panko breadcrumbs
  • teaspoons extra-virgin olive oil
  • ½ cup grated sharp cheddar cheese
  • to taste chopped chives

For serving

  • to taste tortilla chips

Instructions

  1. Preheat the oven broiler and prepare a baking sheet with foil.
  2. Place 2 whole jalapeños and 1 half on the baking sheet, drizzle with olive oil, and sprinkle with salt.
  3. Wrap the garlic clove in foil with olive oil and place it on the baking sheet.
  4. Broil for 10 to 15 minutes until the jalapeños are soft and blistering.
  5. Remove from the oven and let cool, then peel the jalapeños and remove seeds and membranes.
  6. Finely chop the jalapeños and mash the garlic into a paste.
  7. In a bowl, mix yogurt, onion powder, salt, smoked paprika, garlic, and roasted jalapeños.
  8. In another bowl, toss panko with olive oil.
  9. Transfer the yogurt mixture to a baking dish, top with cheese, and sprinkle with panko.
  10. Broil for 1 to 5 minutes until the topping is golden brown.
  11. Garnish with sliced jalapeño and chives, and serve with tortilla chips.
