Ingredients

The filling

  • 1 cup thick whole milk Greek yogurt
  • ¼ cup grated cheddar cheese
  • 3 tablespoons chives
  • 2 cloves garlic
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
  • teaspoon smoked paprika

The jalapeño poppers

  • 12 pieces jalapeño peppers
  • 6 tablespoons panko bread crumbs
  • as needed tablespoons extra-virgin olive oil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the jalapeños in half and remove the seeds and membranes, wearing gloves to protect your hands.
  3. In a bowl, combine the Greek yogurt, cheddar cheese, 2 tablespoons of chives, garlic, onion powder, salt, and smoked paprika.
  4. Fill each jalapeño half with the cheese mixture and sprinkle with panko bread crumbs.
  5. Drizzle olive oil over the filled jalapeños.
  6. Bake for 15 to 20 minutes until the peppers are tender and the topping is golden brown.
  7. Garnish with the remaining chives before serving.
