Ingredients

The rice

  • 2 cups sushi rice

The seasoning

  • ¼ cup rice vinegar
  • 2 tablespoons granulated sugar
  • teaspoons salt

Instructions

  1. Rinse the rice under cool water for 3 minutes and let it dry for 15 minutes.
  2. In a pot, combine the rice with 2 cups of water and bring to a boil.
  3. Cover, reduce heat to low, and cook for 15 minutes.
  4. Remove from heat and let the rice stand, covered, for 15 minutes.
  5. Dissolve the salt and sugar in rice vinegar by microwaving in 30-second intervals.
  6. Transfer the rice to a large glass or wooden bowl and drizzle the vinegar mixture over it.
  7. Gently fold the vinegar mixture into the rice.
  8. Let the rice cool for 10 minutes before serving.
