Instructions
- Wash the rice until the water runs clear, then drain it.
- Place the rice in a rice cooker with the kelp strip and water, then cook according to the rice cooker instructions.
- While the rice cooks, heat the rice vinegar, sugar, and salt in a small pot until the sugar dissolves to make sushi vinegar.
- Moisten a wooden tub and wipe off excess water.
- Once the rice is cooked, remove the kelp strip and transfer the rice to the wooden tub.
- Pour the sushi vinegar over the rice and mix gently while fanning it to cool down the rice.
- Allow the rice to cool to room temperature and cover it with a damp cloth to prevent it from drying out.
