Ingredients

The rice

  • 2 cups sushi rice
  • 3 cups water

The seasoning

  • ½ cup rice vinegar
  • ¼ cup white sugar
  • 1 teaspoon kosher salt
  • 1 tablespoon oil (vegetable or olive)

Instructions

  1. Rinse the rice until the water runs clear, then place it in a saucepan with water and bring to a boil.
  2. Cover the saucepan, reduce heat, and simmer for 20 minutes.
  3. Remove from heat and let it stand covered for 5 minutes, then cool for 20 minutes.
  4. In a separate saucepan, combine vinegar, sugar, salt, and oil, bringing it to a boil and then simmering until the sugar dissolves.
  5. Allow the vinegar mixture to cool while the rice is cooling.
  6. Transfer the cooled rice to a serving dish and drizzle the vinegar mixture over it, stirring to combine.
  7. Let the rice stand for a few minutes to firm up before serving.
