Ingredients

  • 2 tablespoons unsweetened Dutch Process cocoa powder

Wet Ingredients

  • 11 ounces dark chocolate, roughly chopped
  • 1 cup unsalted butter, cut into 1-inch chunks
  • 1 ½ cups granulated sugar
  • ½ cup packed light brown sugar
  • 5 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon instant espresso powder (optional)

Instructions

  1. Preheat the oven to 350°F and butter a 9x13 inch baking dish.
  2. In a bowl, whisk together flour, salt, and cocoa powder.
  3. Melt chopped chocolate and butter in a double boiler or microwave until smooth.
  4. Remove from heat and whisk in granulated and brown sugars until smooth.
  5. Allow the mixture to cool to room temperature, then whisk in 3 eggs.
  6. Add the remaining 2 eggs and vanilla, mixing until just combined.
  7. Fold in the flour mixture gently until just incorporated.
  8. Pour the batter into the prepared baking pan and smooth the top.
  9. Bake for 25-30 minutes, checking for doneness with a toothpick.
  10. Let the brownies cool completely before cutting into squares.
