Instructions
- Preheat the oven to 350F (180C) and grease a 9x13-inch baking dish.
- Cook the protein pasta according to package instructions, then drain and set aside.
- In a skillet, heat olive oil over medium heat, then add chopped onion and minced garlic, cooking until fragrant.
- Add the lean ground beef, breaking it apart, and cook until browned. Stir in marinara sauce and Italian seasoning, then remove from heat.
- In a bowl, whisk together eggs, parsley, Greek yogurt, parmesan cheese, and cottage cheese.
- Layer the ingredients in the baking dish starting with a thin layer of meat sauce, followed by half of the cooked pasta, half of the cheese mixture, and a sprinkle of mozzarella. Repeat the layers and top with remaining meat sauce and mozzarella.
- Bake for 35-45 minutes until the cheese is melted and golden brown. Remove from oven, sprinkle with fresh parsley, slice, and serve.
