Ingredients

The pasta

  • 14.5 ounce protein pasta

The sauce

  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 large onion
  • 1 pound lean ground beef
  • 24 ounces marinara sauce
  • 1 tablespoon Italian seasoning

The cheese layer

  • 2 large eggs
  • ¼ cup parsley
  • ½ cup Greek yogurt
  • 1 cup parmesan cheese
  • 1 pound cottage cheese
  • 1 cup mozzarella cheese

Instructions

  1. Preheat the oven to 350F (180C) and grease a 9x13-inch baking dish.
  2. Cook the protein pasta according to package instructions, then drain and set aside.
  3. In a skillet, heat olive oil over medium heat, then add chopped onion and minced garlic, cooking until fragrant.
  4. Add the lean ground beef, breaking it apart, and cook until browned. Stir in marinara sauce and Italian seasoning, then remove from heat.
  5. In a bowl, whisk together eggs, parsley, Greek yogurt, parmesan cheese, and cottage cheese.
  6. Layer the ingredients in the baking dish starting with a thin layer of meat sauce, followed by half of the cooked pasta, half of the cheese mixture, and a sprinkle of mozzarella. Repeat the layers and top with remaining meat sauce and mozzarella.
  7. Bake for 35-45 minutes until the cheese is melted and golden brown. Remove from oven, sprinkle with fresh parsley, slice, and serve.
