Ingredients

Babka Dough

  • 2 ¾ cups all-purpose flour
  • ¼ cup nonfat powdered/dry milk
  • 3 tablespoons sugar
  • 1 ¼ teaspoons salt
  • 1 tablespoon instant yeast
  • 3 large eggs
  • ¼ cup lukewarm water or warm milk
  • 8 tablespoons unsalted butter

Chocolate Filling

  • ½ cup unsalted butter
  • cup cocoa powder
  • 3 tablespoons brown sugar
  • 3 tablespoons white granulated sugar
  • 1 tablespoon honey or brown rice syrup
  • ½ teaspoon salt
  • 1 tablespoon caraway seeds

Egg Wash

  • 1 large egg yolk

Cream Cheese Frosting

  • 3 ounces cream cheese
  • ¼ cup powdered sugar
  • ½ teaspoon pure vanilla extract
  • 3 tablespoons milk

Instructions

  1. Mix all dough ingredients in a stand mixer until a smooth dough forms.
  2. Knead the dough for about 5 minutes and let it rise in a greased bowl for 1 ½ hours.
  3. Prepare the chocolate filling by mixing all filling ingredients until combined.
  4. Roll out the dough into a rectangle and spread the filling before rolling it into a log.
  5. Freeze the logs for about 5 minutes, then cut each log in half lengthwise.
  6. Twist the halves together and shape into a circle, then place in a greased muffin tin.
  7. Let the buns rise for 1 hour, then preheat the oven to 375°F.
  8. Brush the tops with egg wash and bake for 12 to 15 minutes until golden brown.
  9. Cool in the tin for 5 minutes before transferring to a cooling rack.
  10. Mix cream cheese frosting ingredients and serve alongside the buns.
