Ingredients

The dough

  • cup whole milk
  • 2 ¼ teaspoons Platinum Yeast
  • cup granulated sugar
  • 5 tablespoons unsalted butter
  • 2 large egg yolks
  • 1 teaspoon salt
  • 2 ⅔ cups all-purpose flour

The filling

  • 3 tablespoons unsalted butter
  • 2 large apples
  • 1 teaspoon lemon juice
  • 1 cup packed brown sugar
  • ¼ cup all-purpose flour
  • 2 ½ teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 1 ½ teaspoons pure vanilla extract
  • 1 large egg white

Crumble topping (optional)

  • 2 tablespoons packed brown sugar
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons unsalted butter

For brushing

  • 1 large egg white

Instructions

  1. Prepare the dough by mixing warm milk, yeast, and sugar, then let it sit.
  2. Add remaining sugar, butter, egg yolks, salt, and flour, and mix until incorporated.
  3. Knead the dough until it becomes soft and slightly tacky.
  4. Let the dough rise in a greased bowl for 3-4 hours until nearly doubled in size.
  5. Prepare the filling by cooking apples with butter and mixing the other filling ingredients.
  6. Punch down the dough and roll it out into a rectangle, then spread the filling and add apples.
  7. Roll the dough tightly into a log, twist it into a figure 8, and place it in a greased loaf pan.
  8. Let the shaped babka rise for 1-1.5 hours until puffy.
  9. Prepare the crumble topping and preheat the oven.
  10. Brush the loaf with egg white, poke holes for steam, and sprinkle with crumble topping.
  11. Bake for 60-65 minutes until golden brown and hollow sounding when tapped.
  12. Cool the babka in the pan for at least 30 minutes before slicing.
