Ingredients

Babka Dough

  • cups all-purpose flour
  • 1 tablespoon instant yeast
  • 1 teaspoon granulated sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • ¼ cup orange juice
  • ¼ cup whole milk
  • 2 large eggs
  • 6 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract

Chocolate Orange Filling

  • 4 tablespoons unsalted butter, room temperature
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons cocoa powder
  • 2 ounces dark chocolate, melted and cooled
  • Zest of 1 orange

Orange Syrup

  • 2 tablespoons water
  • 1 tablespoon orange juice
  • ¼ cup granulated sugar

Instructions

  1. Activate the yeast by mixing it with orange juice, milk, and a teaspoon of sugar; let it sit until foamy.
  2. In a stand mixer, combine flour, remaining sugar, and salt. Add the yeast mixture, eggs, butter, and vanilla, then mix until combined.
  3. Knead the dough for 8 to 10 minutes until smooth, then form it into a ball and place it in an oiled bowl. Cover and refrigerate for at least 2 hours or overnight.
  4. Prepare the filling by mixing butter, granulated sugar, brown sugar, cocoa powder, melted chocolate, and orange zest until smooth.
  5. Roll the dough into a rectangle, spread the filling evenly, and roll it tightly into a log.
  6. Slice the log in half lengthwise, twist the halves together, and place in a greased loaf pan. Cover and let rise for about an hour.
  7. Preheat the oven to 350°F and bake for 35 to 40 minutes until golden brown.
  8. Make the orange syrup by heating water, orange juice, and sugar until dissolved.
  9. Brush the loaf with the orange syrup after baking, then cool in the pan for 30 minutes before transferring to a wire rack.
