Unagi Sauce

Ingredients

  • ¼ cup Sake
  • ¼ cup Mirin
  • ¼ cup Soy sauce
  • ¼ cup Caster Sugar
  • a pinch Salt

Instructions

  1. Combine mirin and sake in a small saucepan over medium heat and bring to a boil to evaporate alcohol.
  2. Add sugar and soy sauce, stirring until the sugar dissolves completely.
  3. Reduce heat to low and let the mixture simmer for about 20 minutes until reduced by half.
  4. Add a pinch of salt.
  5. Remove from heat and let cool completely before storing.
