Instructions
- Combine mirin and sake in a small saucepan over medium heat and bring to a boil to evaporate alcohol.
- Add sugar and soy sauce, stirring until the sugar dissolves completely.
- Reduce heat to low and let the mixture simmer for about 20 minutes until reduced by half.
- Add a pinch of salt.
- Remove from heat and let cool completely before storing.
