Ingredients

The pasta

  • 8 ounces spaghetti

The shrimp

  • 1 pound raw shrimp, deveined and peeled
  • 1 teaspoon smoked paprika
  • 2 ounces unsalted butter, divided
  • ½ cup diced yellow onions
  • 3 cloves garlic, minced

The sauce

  • ½ cup mayonnaise
  • ½ cup sweet Thai chili sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon fresh lime juice
  • ¼ cup reserved pasta water

The garnishes

  • 2 green onions chopped
  • to taste salt and pepper
  • teaspoon crushed red pepper flakes (optional)

Instructions

  1. Cook the spaghetti in salted boiling water until al dente, then drain and reserve some pasta water.
  2. Season the shrimp with salt, pepper, paprika, and sweet chili sauce.
  3. In a skillet, melt half the butter and cook the shrimp until golden, then set aside.
  4. In the same skillet, melt the remaining butter and sauté onions and garlic until fragrant.
  5. Add mayonnaise, sweet chili sauce, sriracha, and reserved pasta water to the skillet, whisking until combined.
  6. Bring the sauce to a boil, then simmer until smooth and slightly thickened.
  7. Combine the cooked pasta with the sauce, then add the shrimp and toss to coat.
  8. Finish with lime juice and garnish with green onions and red pepper flakes.
