Bang Bang Shrimp

Ingredients

The sauce

  • 5 tbsp light mayonnaise
  • 3 tbsp Thai Sweet Chili Sauce
  • 1 tsp Sriracha

The shrimp

  • 1 lb large shrimp, shelled and deveined
  • 2 tsp cornstarch
  • 1 tsp canola oil
  • 3 cups shredded iceberg lettuce
  • 1 cup shredded purple cabbage
  • 4 tbsp scallions, chopped

Instructions

  1. Combine mayonnaise, Thai sweet chili sauce, and Sriracha in a bowl and set aside.
  2. Mix shredded lettuce and cabbage and divide onto four plates.
  3. Coat shrimp with cornstarch thoroughly.
  4. Heat oil in a skillet or wok on high heat, then add shrimp and cook until done, about 3 minutes.
  5. Remove shrimp from the pan, mix with the sauce until well coated.
  6. Serve shrimp on the lettuce mixture and top with scallions.
