Ingredients

The shrimp and batter

  • 1 lb peeled and deveined raw shrimp
  • scant ¾ cup all-purpose flour (or gluten-free flour)
  • 1 large egg
  • 1 cup cold water
  • 1 teaspoon salt
  • nonstick cooking spray (for air frying or baking)

The sauce

  • ¼ cup mayonnaise
  • 2 tablespoons sweet Thai chili sauce
  • 1–2 teaspoons sriracha (or other hot sauce)
  • 1 tablespoon water (to loosen sauce)

Optional serving

  • shredded romaine
  • sliced green onions

Instructions

  1. Rinse and pat the shrimp dry.
  2. Toss the shrimp with 1 tablespoon of flour to coat lightly.
  3. In a separate bowl, whisk the egg and add cold water, then gradually sprinkle in the remaining flour while whisking to form a batter.
  4. Stir in the salt into the batter.
  5. Coat the flour-coated shrimp in the batter.
  6. Prepare the air fryer or oven for cooking the shrimp.
  7. Make the bang bang sauce by combining mayonnaise, sweet Thai chili sauce, sriracha, and water in a bowl.
  8. Cook the shrimp in the air fryer or oven until crispy and golden brown, then toss with the sauce.
  9. Serve immediately over shredded romaine and garnish with green onions.
