Ingredients

  • 1 piece grass fed top sirloin steak
  • to taste Sagemary finishing salt
  • to taste freshly ground black pepper
  • 2 tablespoons lard

Instructions

  1. Season the steak with salt and pepper before vacuum sealing it.
  2. Cook the sealed steak in the SousVide Supreme at 130°F for 30 hours.
  3. Remove the steak from the bag and dry it off.
  4. Heat lard in a cast iron skillet on high heat.
  5. Sear the steak for approximately 2 minutes on each side.
