Crispy Parmesan Crusted Potatoes

Ingredients

The potatoes

  • 1 ½ lbs honey gold or small Yukon gold potatoes

The seasoning and coating

  • 3 tablespoons butter, melted
  • ¾ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon dried dill
  • ¼ teaspoon onion powder
  • teaspoon black pepper
  • ½ cup shredded Parmesan cheese

Additional ingredients

  • cooking spray avocado oil spray
  • fresh parsley or chives (optional garnish)
  • flaky sea salt (optional garnish)

Instructions

  1. Preheat the oven to 400℉.
  2. Spray a 9×13-inch baking dish with cooking spray.
  3. Pour the melted butter into the baking dish.
  4. Add the garlic powder, dill, fine salt, onion powder, black pepper, and Parmesan to the dish with the butter.
  5. Add the potatoes to the dish and toss them in the butter Parmesan mixture to coat well.
  6. Arrange the potatoes cut-side down in the baking dish.
  7. Bake for 22 – 25 minutes until golden brown and tender when pierced with a fork.
  8. Allow the potatoes to cool for 5 minutes before transferring to a serving dish.
  9. Garnish with chopped fresh parsley or chives and flaky sea salt, if desired. Serve with ranch or sour cream for dipping.
