Instructions
- Preheat the oven to 425°F.
- Wash and halve the mini yukon gold potatoes, then score the cut sides with diagonal lines.
- In a large bowl, combine the potatoes with olive oil, parsley, garlic powder, sea salt, and black pepper, tossing to coat.
- In a separate bowl, mix melted butter with grated parmigiano reggiano to form a thick paste.
- Spread the butter and cheese mixture evenly in a baking dish.
- Place the potatoes cut-side down in the dish, pressing them into the mixture.
- Bake the potatoes for 25-26 minutes until crispy and golden.
- Allow the potatoes to cool for 10 minutes before serving.
