Ingredients

The potatoes

  • 1 pound Mini Yukon Gold Potatoes

The seasoning and coating

  • 2 tablespoons Olive Oil
  • 1 tablespoon Dried Parsley
  • 1 tablespoon Garlic Powder
  • ½ teaspoon Sea Salt
  • ½ teaspoon Ground Black Pepper
  • ¼ cup Unsalted Butter
  • 1 ½ cups Parmigiano Reggiano

Instructions

  1. Preheat the oven to 425°F.
  2. Wash and halve the mini yukon gold potatoes, then score the cut sides with diagonal lines.
  3. In a large bowl, combine the potatoes with olive oil, parsley, garlic powder, sea salt, and black pepper, tossing to coat.
  4. In a separate bowl, mix melted butter with grated parmigiano reggiano to form a thick paste.
  5. Spread the butter and cheese mixture evenly in a baking dish.
  6. Place the potatoes cut-side down in the dish, pressing them into the mixture.
  7. Bake the potatoes for 25-26 minutes until crispy and golden.
  8. Allow the potatoes to cool for 10 minutes before serving.
