Instructions
- Preheat the oven to 425°F.
- Wash and scrub the mini potatoes, then slice them in half.
- In an 8x8 baking dish, combine melted butter, garlic powder, Italian seasoning, and ⅓ cup of parmesan cheese to form a paste.
- Add the halved potatoes to the baking dish and toss to coat them in the paste.
- Sprinkle the remaining ¼ cup of parmesan cheese on top of the potatoes.
- Bake for 35-45 minutes until crispy and golden.
- Serve and enjoy, storing leftovers in an airtight container.
