Sheet-Pan Halloumi With Avocado and Citrus

Instructions
- Preheat the oven to 400°F and place a rimmed baking sheet inside.
- In a large bowl, toss the torn pita, Halloumi cheese, ¼ cup olive oil, and kosher salt until coated.
- Spread the mixture in a single layer on the hot baking sheet and roast for 18–20 minutes, tossing halfway through.
- In the reserved bowl, whisk together the lime juice, honey, remaining olive oil, and salt.
- Prepare the citrus by cutting away the peel and pith, then slice into wedges and add to the dressing along with the shallot and half of the jalapeño.
- Once the Halloumi and pita are done, combine everything in the bowl and toss gently.
- Transfer to a platter, top with dill and remaining jalapeño, and scoop avocado on top before drizzling with leftover dressing.
