Sheet-Pan Halloumi With Avocado and Citrus

Ingredients

  • 3–4 medium pitas
  • 2 packages Halloumi cheese
  • ½ cup extra-virgin olive oil
  • 1 tsp kosher salt
  • ¼ cup fresh lime juice
  • 2 Tbsp honey
  • 2 medium oranges
  • 1 large grapefruit
  • 1 medium shallot
  • 1 medium jalapeño
  • cup coarsely chopped dill
  • 1 large ripe avocado

Instructions

  1. Preheat the oven to 400°F and place a rimmed baking sheet inside.
  2. In a large bowl, toss the torn pita, Halloumi cheese, ¼ cup olive oil, and kosher salt until coated.
  3. Spread the mixture in a single layer on the hot baking sheet and roast for 18–20 minutes, tossing halfway through.
  4. In the reserved bowl, whisk together the lime juice, honey, remaining olive oil, and salt.
  5. Prepare the citrus by cutting away the peel and pith, then slice into wedges and add to the dressing along with the shallot and half of the jalapeño.
  6. Once the Halloumi and pita are done, combine everything in the bowl and toss gently.
  7. Transfer to a platter, top with dill and remaining jalapeño, and scoop avocado on top before drizzling with leftover dressing.
