Ingredients

The dough

  • 1 cup oat flour
  • 2 teaspoons baking powder
  • ¾ teaspoon kosher salt
  • 1 cup low-fat classic cottage cheese
  • 1 large egg white

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the oat flour, baking powder, and salt.
  3. Add the cottage cheese and mix until combined, then knead the mixture until smooth.
  4. Divide the dough into 4 equal portions and shape them into rounds.
  5. Place the rounds on the baking sheet, brush with egg wash, and top with seasoning if desired.
  6. Bake for 22 to 25 minutes until golden brown.
  7. Allow to cool for at least 15 minutes before slicing.
