Ingredients

The main dish

  • 1 each Cornish Game Hen

The vegetables

  • 1 cup string beans

The starch

  • 3 each sweet potatoes
  • ½ cup brown sugar
  • ½ stick butter
  • 1 tablespoon fig balsamic

The dessert

  • 1.5 cups milk
  • 4 each eggs
  • ¼ cup triple sec
  • 2 tablespoons orange zest
  • 1 cup cranberries
  • ½ cup craisins
  • ½ cup sugar
  • ¾ loaf challah or brioche bread

Instructions

  1. Marinate the Cornish Game Hen in lemon oil and black pepper.
  2. Prepare a sweet potato packet with sweet potatoes, fig balsamic, brown sugar, and butter, and grill for at least 40 minutes on indirect heat.
  3. Grill the Cornish Game Hen and add the string beans to the grill.
  4. For dessert, mix milk, eggs, triple sec, orange zest, cranberries, craisins, sugar, and bread pieces.
  5. Let the bread soak in the mixture for at least 20 minutes.
  6. Bake the bread pudding on indirect heat on the grill for 30 minutes.
