Vegan Salted Caramel Sauce

Ingredients

  • ¾ can full fat coconut milk
  • 2 tbsp tapioca flour (or arrowroot)
  • ¼ cup coconut sugar
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • ¼ cup maple syrup

Instructions

  1. In a small pot, whisk together all ingredients except for the tapioca flour.
  2. Bring the mixture to a light boil, then reduce the heat to low and stir gently for about 15 minutes.
  3. Remove from heat and add the tapioca flour, mixing well to avoid lumps.
  4. Gently stir on and off for about 20 minutes, allowing it to cool slightly.
