Vegan Caramel Sauce

Ingredients

  • ¾ cup vanilla soymilk
  • 1 cup granulated sugar
  • ¼ cup pure maple syrup
  • 1 tablespoon cornstarch or arrowroot flour
  • 1 tablespoon water
  • 2 tablespoons dairy-free soy margarine
  • 1 teaspoon vanilla extract
  • teaspoon kosher salt

Instructions

  1. Combine the soymilk, sugar, and maple syrup in a saucepan over medium heat and cook for 5 minutes, whisking often.
  2. In a small bowl, whisk together the cornstarch and water.
  3. Add the cornstarch mixture to the saucepan and cook until it bubbles and thickens slightly.
  4. Remove from heat and stir in the soy margarine, vanilla extract, and kosher salt.
  5. Transfer to a heat-proof container and let it cool to room temperature.
