Ingredients

The pasta

  • 12 ounces spaghetti
  • 1 cup reserved pasta water

The chicken

  • 1 pound skinless, boneless chicken thigh, thinly sliced
  • ¾ teaspoon salt

The sauce

  • 3 tablespoons olive oil
  • 8 tablespoons unsalted butter
  • 6 cloves garlic, sliced
  • ½ teaspoon chili powder
  • ½ cup dry white wine
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • ½ cup grated parmesan

Garnish

  • ½ cup fresh parsley, finely chopped

Instructions

  1. Season the chicken with salt and sauté in olive oil until cooked through.
  2. Boil salted water and cook the spaghetti until al dente, then drain and reserve some pasta water.
  3. In the same skillet, sauté garlic and chili powder until fragrant, then add dry white wine and simmer until reduced by half.
  4. Add the cooked chicken and spaghetti to the sauce, along with reserved pasta water.
  5. Stir in lemon zest, lemon juice, and butter until melted and well combined.
  6. Finish by stirring in grated parmesan and adjusting salt to taste.
  7. Serve garnished with more parmesan and chopped parsley.
