Chicken Scampi

The sauce

Instructions
- 1. Boil a large pot of salted water.
- 2. Heat one tablespoon of olive oil in a pan and cook the peppers and onions until softened.
- 3. Add minced garlic and cook briefly, then season with salt and pepper.
- 4. Remove the vegetables and keep warm.
- 5. Coat chicken tenderloins in flour seasoned with salt and pepper.
- 6. Heat the remaining olive oil in the pan and cook the chicken until golden brown.
- 7. Cook the pasta according to package directions.
- 8. For the sauce, melt butter in the pan, add flour, and whisk together.
- 9. Add white wine and bring to a simmer, then stir in chicken broth and cream, cooking until thickened.
- 10. Stir in lemon juice and parmesan cheese, then season with salt and pepper.
- 11. Drain the pasta and combine with the sauce and vegetables.
- 12. Serve the pasta topped with the chicken and sprinkled with parsley.
