Ingredients

The pasta

  • 2 tablespoons olive oil
  • 1 cup bell peppers, thinly sliced
  • ½ cup red onions, thinly sliced
  • 2 teaspoons minced garlic
  • 1 lb boneless skinless chicken tenderloins
  • ½ cup flour
  • to taste salt and pepper
  • 10 ounces dry angel hair pasta
  • 2 tablespoons chopped parsley

The sauce

  • 4 tablespoons butter
  • 2 tablespoons flour
  • ½ cup white wine
  • 1 cup chicken broth
  • ¼ cup heavy cream
  • 2 teaspoons lemon juice
  • ¼ cup grated parmesan cheese
  • to taste salt and pepper

Instructions

  1. 1. Boil a large pot of salted water.
  2. 2. Heat one tablespoon of olive oil in a pan and cook the peppers and onions until softened.
  3. 3. Add minced garlic and cook briefly, then season with salt and pepper.
  4. 4. Remove the vegetables and keep warm.
  5. 5. Coat chicken tenderloins in flour seasoned with salt and pepper.
  6. 6. Heat the remaining olive oil in the pan and cook the chicken until golden brown.
  7. 7. Cook the pasta according to package directions.
  8. 8. For the sauce, melt butter in the pan, add flour, and whisk together.
  9. 9. Add white wine and bring to a simmer, then stir in chicken broth and cream, cooking until thickened.
  10. 10. Stir in lemon juice and parmesan cheese, then season with salt and pepper.
  11. 11. Drain the pasta and combine with the sauce and vegetables.
  12. 12. Serve the pasta topped with the chicken and sprinkled with parsley.
