Quinoa Spinach Turkey Burgers with Goat Cheese

Ingredients

  • 1 lb. ground turkey
  • 1 cup cooked quinoa
  • 1 tsp. garlic powder
  • ¼ cup finely diced onion
  • 1 tsp. Italian or Greek seasoning
  • ½ tsp. salt
  • tsp. black pepper
  • 2 cups fresh spinach, chopped
  • 2 oz. crumbled goat cheese
  • 1 Tbsp. coconut oil or avocado oil

Instructions

  1. Combine all ingredients except goat cheese in a large bowl and mix well.
  2. Gently fold in the crumbled goat cheese.
  3. Shape the mixture into 8 patties.
  4. Heat 1½ tsp. of oil in a skillet over medium-high heat.
  5. Cook half of the patties for 4-5 minutes until browned, then flip and cook for another 3-4 minutes until cooked through.
  6. Repeat with the remaining oil and patties.
