Ingredients

The dipping sauce

  • ½ cup sour cream
  • 2 teaspoons lemon juice
  • ¼ teaspoon garlic powder

The tomatoes

  • 2 whole green tomatoes (12-14 ounces total)
  • cup whole-grain cornmeal (finely ground)
  • to taste salt
  • to taste pepper
  • as needed ghee or other high-temperature cooking oil

Instructions

  1. Whisk together the sour cream, lemon juice, and garlic powder to make the dipping sauce and set aside.
  2. Thinly slice the green tomatoes to about ¼-inch thick and dredge both sides in cornmeal.
  3. Heat a thin layer of ghee in a cast iron skillet over medium heat.
  4. Cook the tomato slices in batches until tender and golden brown, a couple of minutes per side.
  5. Add more ghee as needed to prevent the skillet from drying out and wipe out crumbs between batches.
  6. Transfer the cooked tomatoes to a paper-towel lined plate, season with salt and pepper, and serve warm with the dipping sauce.
