Shortcut Fried Green Tomatoes

whole-grain cornmeal (finely ground)

ghee or other high-temperature cooking oil
Instructions
- Whisk together the sour cream, lemon juice, and garlic powder to make the dipping sauce and set aside.
- Thinly slice the green tomatoes to about ¼-inch thick and dredge both sides in cornmeal.
- Heat a thin layer of ghee in a cast iron skillet over medium heat.
- Cook the tomato slices in batches until tender and golden brown, a couple of minutes per side.
- Add more ghee as needed to prevent the skillet from drying out and wipe out crumbs between batches.
- Transfer the cooked tomatoes to a paper-towel lined plate, season with salt and pepper, and serve warm with the dipping sauce.
