Ingredients

The tomatoes

  • 1 pound green tomatoes, sliced ½-inch thick

The egg mixture

  • 2 large eggs, beaten

The frying oil

  • 3 tablespoons olive oil

The dredging mixture (optional)

  • 1 tablespoon oat fiber
  • 1 tablespoon whey protein powder

The keto breadcrumb coating

  • 1 cup crushed pork rinds
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon onion powder

Instructions

  1. Prepare a large sheet pan with waxed or parchment paper.
  2. Slice the tomatoes and let them drain on paper towels.
  3. In a shallow bowl, whisk together the protein powder and oat fiber for the dredging mixture.
  4. In another shallow bowl, mix the ingredients for the keto breadcrumbs.
  5. Beat the eggs in a third shallow bowl.
  6. Dredge each tomato slice in the dredging mixture, then dip in the egg, and finally coat with the breadcrumb mixture.
  7. Heat a frying pan over medium heat and add olive oil.
  8. Fry the coated tomato slices until golden brown, turning to cook both sides.
  9. Remove the fried tomatoes and let them drain on paper towels or a cooling rack.
  10. Serve with a dipping sauce of your choice.
