Ingredients

The remoulade sauce

  • 1 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon anchovy paste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • to taste salt and ground white pepper
  • to taste Tabasco sauce
  • to taste Worcestershire sauce
  • ¼ cup fresh parsley, finely chopped

The fried tomatoes

  • 2 cups buttermilk
  • 1 teaspoon Cajun seasoning
  • 1 pound unripened green tomatoes, sliced ½ inch thick
  • ¾ cup cornmeal
  • to taste salt and freshly ground black pepper
  • to ¼-inch deep amount vegetable oil for frying

Instructions

  1. Prepare the remoulade by whisking together mayonnaise, ketchup, lemon juice, mustard, anchovy paste, garlic powder, onion powder, and cayenne pepper in a bowl. Season with salt, pepper, Tabasco, and Worcestershire sauce to taste, then garnish with parsley and chill until serving.
  2. In another bowl, mix buttermilk with Cajun seasoning. Add tomato slices and coat evenly. Let marinate for 5 minutes.
  3. Combine cornmeal, salt, and pepper in a medium bowl. Dredge each tomato slice in the cornmeal mixture and place on a wire rack.
  4. Heat oil in a skillet to 375 degrees. Fry the tomato slices in batches until golden brown on both sides, about 2 to 3 minutes per side.
  5. Drain the fried tomatoes on paper towels and sprinkle with salt. Serve with the remoulade sauce.
