unripened green tomatoes, sliced ½ inch thick

cornmeal

Instructions
- Prepare the remoulade by whisking together mayonnaise, ketchup, lemon juice, mustard, anchovy paste, garlic powder, onion powder, and cayenne pepper in a bowl. Season with salt, pepper, Tabasco, and Worcestershire sauce to taste, then garnish with parsley and chill until serving.
- In another bowl, mix buttermilk with Cajun seasoning. Add tomato slices and coat evenly. Let marinate for 5 minutes.
- Combine cornmeal, salt, and pepper in a medium bowl. Dredge each tomato slice in the cornmeal mixture and place on a wire rack.
- Heat oil in a skillet to 375 degrees. Fry the tomato slices in batches until golden brown on both sides, about 2 to 3 minutes per side.
- Drain the fried tomatoes on paper towels and sprinkle with salt. Serve with the remoulade sauce.
